Why does a small text change produce a different hash?

Hashes use the exact text, so changes to case, spacing or line breaks change the digest.

Can I use these hashes to store passwords?

No. MD5 and SHA-1 are legacy checksums, and even SHA-256 or SHA-512 alone are not password-storage functions. Use a dedicated password-hashing system.
